Sourdough Neopolitan Pizza

250g sourdough (bubbly)

400g water

300g All purpose flour

400g 00 flour

7g salt

Stir together sourdough starter and water until thoroughly mixed. Add flour slowly, mixing well. Let rest for an hour. After the hour, add in salt and knead well.

*add in any other spices you like in your crust on this step as well. I like dried thyme

Let dough rise on counter, covered, for about 6 hours or until doubled in size.

After rising, punch dough down and split into 8 sections

Roll each into a ball and place into a container.

Place container in the fridge for at least 12 hours and up to 48.

Bring dough out an hour before making pizza to let come to room temp.

Dust counter with semolina and 00. Shape pizza into circles.

Add whatever toppings you like. (Pizza sauce recipe in another post)

*We use low moisture mozzarella to prevent dough from getting soggy

Once prepped cook in your pizza oven at 800-900° F
