2 english cucumbers
16 oz of strawberry (one standard container)
6 oz block of feta cheese
Olive Oil (I used blood orange)
Balsamic vinegar (I used bourbon barrel aged)
Slice cucumber and strawberries thinly.
Sprinkle with salt and pepper
Let marinate about 2-3 hours
Drain any excess liquid
Add 2 tbsp each of olive oil and balsamic vinegar.
Shake/stir to coat
Top with crumbled feta and stir again
I highly recommend a flavored olive oil to really blend in well with the spring flavors. A lemon or lime olive oil would be delicious here too.
